Conference Day Chili

Today we enjoyed watching our church's General Conference online through BYU TV. For dinner, I made a variation of my friend Marci's Crock Pot Chili - but I just cooked it over the stove and changed some of the ingredients. I don't like beans, so I omitted those and changed the ground beef to ground turkey. Here is my take on it:

Conference Day Chili:
Ingredients:
2-14 oz. cans fire-roasted diced tomatoes (I used the Hunt's brand)
1/2 lb. lean ground turkey
1 onion chopped
1 green pepper chopped
3 stalks celery chopped
1 can corn
2 cloves garlic minced
2 T chili powder
1 t pepper
1 t cumin
2 T sugar
1 1/2 t salt
1 small can of vegetable or chicken stock (you may not need the entire can - just add enough to give it a good consistency)

Directions:
Brown ground turkey with onions, garlic, and green pepper in a stock pot. Add the rest of the ingredients, bring to a boil, then turn the burner to low and simmer for 30 minutes. We also had a loaf of french bread, so we cut it open and in half, brushed some garlic olive oil on the bread, broiled it for 5 minutes until it was toasted but not burned, and it was delish!

mmmm.....sounds good. I love chili, any type. I will have to give this one a try. (my favorite one has beans, so I won't share that one with you!!) ;)
