Kale Chips

My friend Caitlin introduced me to a delicious, healthy treat - baked kale chips. The recipe is super simple, found here. I made it tonight and we all loved it, even my picky kids. When kale is baked like this, it's super light and practically melts in your mouth. Click here to learn about the many health benefits of kale - there are a lot of them!

Ingredients

  • 1 bunch kale
  • 1 tablespoon olive oil
  • 1 teaspoon seasoned salt

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C). Line a non insulated cookie sheet with parchment paper.
  2. With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt.
  3. Bake until the edges brown but are not burnt, 10 to 15 minutes.

I am SUPER excited to try this recipe. I have been craving veggie chips. And Aaron loves Kale, so I buy it, but I am not the hugest fan of it (though I only know to boil it).

Although, I did stick a tiny bit in a smoothie the other day, and Adele didn't mind it.

I love how simple the recipe is. Thanks! (This will be good for our fam since Aaron always talks about how he needs to eat kale to help prevent Macular Degeneration, since it's heredity - Grandma W. had it).

I noticed that article you linked to doesn't mention macular degeneration, or that Kale is rich in lutein, which is supposed to help with that disease. (This is all stuff Aaron tells me). But I looked it up:

Awesome, I can't wait to try it. We just made our imitation 'Zuppa Toscana' tonight which I packed with Kale, it's so yummy!
